This recipe is from my friend, Jyukki, who is from South Korea and lives in the U.S. I’ve been loving these yuzuki noodles since I started my blog, but I’ve been learning a lot about them recently. They are one of my favorite recipes so I decided to share one that uses them in the yuzuki soup that I serve at my home.

I’m not sure how I feel about this. I find that the actual yuzuki-seo I’ve created has a bit of a similar appearance to authentic seo, but I feel a bit more authentic. I think I might try it again, and not limit myself to just the shiitake.
