I guess you could say Lee Seo Jin is a creative cook. But his creations also incorporate the typical ingredients that make up a high-end restaurant: special ingredients, high quality ingredients, and good ingredients. The one that made me smile was the dessert called the “Strawberry Cupcake.” For those who are wondering, strawberry is a fruit that is quite common in South Korea, and is indeed a very popular dessert.
The strawberry cupcake is a classic, very popular, and one that I was very very much looking forward to trying. In fact, I had it all planned out. I went to the grocery store and picked up some strawberries, and then had the recipe ready in my head. Then when I got home, it was time to make the cupcake. I couldn’t find strawberry jam for a while, so I used honey and sugar for the filling.
Of course, strawberry jam isnt exactly what we would consider a jam, but it is a sweet fruit that I knew I could make into a jam.
The recipe was simple, and just meant that I would need to add a few things. First, the strawberries needed to dry a bit so they didn’t end up too ripe. Next, I needed to reduce some of the sugar to get the ratio right. Finally, I needed to whisk the batter in the microwave until it thickened up enough to put into the cupcake.
I like this recipe because I didnt have to add any extra ingredients. It’s not that it was difficult to make, but it was just a lot easier than I thought it would be.
